Meatless Monday is a site that I found that provides lots of recipes that do not have meat in them. Cooking even one night a week without meat will help cut down your grocery bill and save a few pennies.  Plus it will encourage you to eat a few more veggies and we all can do that! A few recipes that immediately caught my eye were the Baked Pumpkin Mac & Cheese, Fresh Summer Frittata, and their Eggplant Casserole. They even give you the nutrition information for each recipe so you know exactly how many calories your eating.

So, why make Monday meatless of all days? They had a great reason why at meatlessmonday.com

Why Monday?
