Fast affordable dinner!

Happy Sunday! I had to share this recipe from All You because it looks so fabulously delicious, easy to make, AND affordable. The cost per serving is only $2.15! This looks like the perfect weekday meal when time is limited, but you still want something really tasty.

The recipe uses cheese ravioli and a mixture of mozzarella cheese & spinach in between the ravioli layers.  Totally easy and you could get creative and add whatever else you have on hand. I would be inclined to add mushrooms and probably ground turkey in addition to the spinach and mozzarella cheese.  My mouth is already watering at this recipe! I may be making this this week.

4 Servings, Prep time: 10 minutes, Cook time: 40 minutes


  • 1 1/4 cups marinara sauce
  • 1 20-oz. package refrigerated cheese ravioli
  • 1 10-oz. box frozen chopped spinach, thawed and squeezed dry
  • 8 ounces shredded part-skim mozzarella
  • 1/4 cup grated Parmesan


  • Preheat oven to 375°F. Lightly grease an 8-inch-square baking dish. Spoon 1/4 cup marinara sauce over bottom of dish. Cover with half of ravioli. Spread half of remaining sauce over ravioli. Sprinkle on spinach and then half of mozzarella. Repeat with remaining ravioli, marinara and mozzarella. Sprinkle top with Parmesan.
  • Cover dish with foil and bake for 30 minutes. Remove foil and bake until bubbling, about 10 minutes longer. Let cool for about 5 minutes before slicing.

    Oh, man! This looks so yummy. And the work that goes into it is nothing. My toddler has become my assistant chef in the kitchen – if he even hears a pan or a bowl being moved, he insists upon helping me. This recipe is one that would be easy for him to help with. Thank you for sharing it.

    (BTW – if you do the bubbles, try the canning jar lid. It worked the best for giant bubbles for us. On a windy day, you don’t even have to blow!)
