Yummy meal on the cheap

About once a week the hubby and I enjoy making our own homemade pizzas. I guess you could say they’re only semi-homemade since I use premade crust but it’s such a cheap meal to make and tastes great! A lot of pizzas you buy are often greasy which is why I like our custom pizza since it’s fairly healthy and not really greasy at all.

Ingredients you’ll need are:

-Crust (however many you’ll need for your family) I prefer to buy two mini pizza crusts so we each have our own & a bit left over.

-2 Tomatoes

-Olive oil

-Salt & pepper

-Garlic

Here’s what I do! I take some tomatoes, whatever kind I happen to have in the house and chop them up in small pieces. I then toss them with some olive oil, chopped garlic, salt & pepper and set aside. Then I take some mozzarella cheese and cut it up into slices. Then I go into my backyard and pick some fresh basil. (I started it from seed and have several plants so we always have fresh basil!) Then all you need to do is assemble and pop it in the oven. I like to put the cheese down first and then the basil and lastly the tomatoes since I try to pour some of the oil from the tomato mixture on top of everything else. I used to put olive oil on the crust before all the toppings, but you really don’t need it since there is already oil in the tomatoes. I usually cook it at 350 for 5-8 minutes and watch it until the cheese is nice and bubbly.  Oh and I put the pizza right on the oven rack so you’ll want a tray underneath it in case anything drips/falls off.

This pizza is also really great on the grill! The original recipe for this pizza was from a friend who makes her own (fabulous) dough, grills it and then makes the pizza. Grilling it gives it a summery, smoky flavor that’s absolutely delicious.  This is a great summer meal that you can do indoors or out and you can put whatever you like on it, really.
